Sandwich Buns (Gluten-Free)

What you need:
* 3/4 c. white rice flour
* 1 1/4 c. brown rice flour
* 1/2 c. white sorghum flour
* 1/2 c. tapioca flour
* 2 1/2 tsp. guar (or xanthan) gum
* 1 Tbsp. yeast
* 1 tsp. salt
* 2 Tbsp. sugar or sugar substitute
* 2 Tbsp. olive oil
* 1 tsp. apple cider vinegar
What to do:
1. Preheat oven to 350°F.
2. Add liquid and dry ingredients together in a food processor (or whisk quickly in a bowl). The batter will be thick.
3. Spoon batter into a muffin pan for mini sandwich buns, or you can use tuna cans with the top and bottom cut out for a bigger bun. Or you can spoon out on a baking sheet for biscuits.
4. Bake around 15 minutes for small muffins/biscuits and 20 minutes for larger buns.
