* 1 lb. chicken, cut in cubes (or prepared kabobs)
* 10 oz. jar apricot preserves
* 4 Tbsp. orange liquor OR orange juice
* 2 Tbsp. butter
1. In small saucepan heat together the jam, juice and butter. Stir until butter melts.
2. Place chicken in large ziploc plastic bag; add 3/4 c. of glaze; coat chicken well.
3. Thread chicken on skewers (alternating with green pepper and pineapple chunks if desired)
4. Grill 10-12 min, brushing with additional glaze.
