* 1 medium jalapeno pepper, stemmed, seeded and minced
* 2/3 c. diced red bell pepper
* 1/3 c. diced red onion
* 2 Tbsp. chopped fresh cilantro
* 2 Tbsp. fresh lime juice
* 1 Tbsp. olive oil
* 1/2 tsp. ground cumin
* 1/2 tsp. kosher salt
* 3 large ripe mangos, peeled, pitted and diced
