Smoked Mackerel and Apple Salad

What you need:

+ 12 oz. 'ready to eat' smoked mackerel fillets, skinned
+ 1 large apple, peeled and chopped
+ 2 stalks celery, chopped
+ 1 oz. raisins
+ salt and black pepper
+ 1 Tbsp. lemon juice
+ 3 Tbsp. yogurt
+ 2 Tbsp. mayonnaise
+ shredded lettuce
+ grated lemon rind, to garnish
What to do:
1. Cut the fish fillets into cubes and place in a large bowl. Mix in the apple, celery, raisins, seasoning and lemon juice.
2. Mix mayonnaise and yogurt together and pour over salad. Serve on a bed of crisp shredded lettuce accompanied with brown bread and butter.
