Roasted Curry Cauliflower Bites (Gluten-Free and Vegan)

+ 1 large head organic cauliflower
+ 1-1/2 tsp. chili powder + 1/2 tsp. curry powder + 1 tsp. ground allspice + 2 Tbsp. extra virgin olive oil + juice of 1 large orange + 1 c. ground pistachios + 1 Tbsp. fennel seeds + 1/4 tsp. sea salt + 1/4 c. fresh oregano, finely chopped + hummus, for serving What to do:
1. Preheat oven to 375°F. Line a baking pan with tin foil. Cut cauliflower into florets. Place into the baking pan.
2. In a small bowl, whisk together remaining ingredients. Drizzle over cauliflower. Roast for 25-30 min. or until golden brown. Place into the fridge overnight in a glass bowl, covered. 3. Enjoy at room temperature with hummus. * This gluten-free, dairy-free, soy-free dish is a wonderful vegan snack or side dish! |
