Fiesta Breakfast Cups

What you need:

+ 1 c. egg substitute
+ 1 (4-oz.) can chopped green chilies, rinsed and drained
+ 1 c. sliced mushroom, sauteed
+ 2 Tbsp. jarred roasted red pepper, drained and chopped
+ 1/2 c. shredded Mexican cheese blend
What to do:
1. Preheat oven to 350°F. Coat 6 muffin cups with cooking spray.
2. In a large bowl, combine all ingredients; mix well then spoon into muffin cups.
3. Bake 20 to 25 minutes, or until eggs are set. Serve immediately.
