Lemon Vegetable Rice Pilaf (Gluten-Free)

What you need:

+ 1 Tbsp. olive oil
+ 1/2 c. chopped onions
+ 1 c. frozen mixed vegetables
+ 1 Tbsp. gluten free chicken bouillon
+ 1 tsp. grated lemon zest
+ 2 Tbsp. lemon juice
+ salt to taste
+ pepper to taste
+ 2 c. uncooked, brown or white, instant rice
What to do:
1. Heat pan on stove top. Add olive oil. When oil is hot, add onions and mixed vegetables.
2. Saute until onions are soft. Remove from heat.
3. Add remaining ingredients, except rice, to pan.
4. Proceed with instant rice instructions on box for 4 servings (2 cups uncooked rice), using pan with vegetable mixture.

* Microwave instructions:
If cooking in microwave, transfer vegetable mixture to microwave dish and proceed with microwave instructions on box for 4 servings (2 cups uncooked rice).
