Sandwich Buns (Gluten-Free)

+ 3/4 c. white rice flour
+ 1 1/4 c. brown rice flour + 1/2 c. white sorghum flour + 1/2 c. tapioca flour + 2 1/2 tsp. guar (or xanthan) gum + 1 Tbsp. yeast + 1 tsp. salt + 2 Tbsp. sugar or sugar substitute + 2 Tbsp. olive oil + 1 tsp. apple cider vinegar What to do:
1. Preheat oven to 350°F.
2. Add liquid and dry ingredients together in a food processor (or whisk quickly in a bowl). The batter will be thick. 3. Spoon batter into a muffin pan for mini sandwich buns, or you can use tuna cans with the top and bottom cut out for a bigger bun. Or you can spoon out on a baking sheet for biscuits. 4.
