Deli Cole Slaw or Pasta Salad Corn Bread Squares Pineapple Slices Prep Time: 5 Min. Cook Time: 10 Min. What you need:

+ 2 pan size fish fillets, cleaned (tilapia, swai, drum, catfish, arctic char, branzino, orange roughy, king fish, or basa)
+ 1/4 c. seasoned bread crumbs, + 1/4 c. peanuts, pecans or walnuts; finely chopped; + 2 Tbsp. butter or vegetable oil What to do:
1. Preheat oven to 450°F. Place baking pan in oven to preheat.
2. Mix together bread crumbs and finely chopped nuts. 3. Melt Butter; coat both sides of fish with butter; then dredge in the crumb mixture. 4. Place in preheated pan (use hot mitts). 5. Bake for 10 min. Wine pairings:
Chardonnay, Fumé Blanc, Pinot Grigio
