Apricot Glazed Chicken Kabobs

+ 1 lb. chicken, cut in cubes (or prepared kabobs)
+ 10 oz. jar apricot preserves + 4 Tbsp. orange liquor OR orange juice + 2 Tbsp. butter What to do:
1. In small saucepan heat together the jam, juice and butter. Stir until butter melts.
2. Place chicken in large ziploc plastic bag; add 3/4 c. of glaze; coat chicken well. 3. Thread chicken on skewers (alternating with green pepper and pineapple chunks if desired) 4. Grill 10-12 min, brushing with additional glaze. Wine pairings:
Riesling/Rhine, Chardonnay, Pinot Grigio
