Apple Cinnamon Muffins (Gluten-Free)

*+ 1 1/2 c. Gluten-Free Flour Blend
+ 1/2 c. brown sugar + 2 tsp. baking powder + 1 tsp. ground cinnamon + 1/2 tsp. xanthan gum ( check your store's Natural Foods section) + 1/4 tsp. salt + 1/4 c. melted butter (or applesauce) + 2 eggs + 1/2 c. milk (or milk substitiute) + 1 apple, peeled and diced *+ Gluten-Free Flour Blend ingredients: + 6 cups Brown or White Rice Flour + 2 cups Potato Starch + 1 cup Tapioca Flour (whisk ingredients together, store room temp) *+ For 1 1/2 cup gluten-free flour blend: + 1/2 cup rice flour + 1/2 cup cornstarch + 1/2 cup tapioca starch/flour + 1 Tbsp potato flour What to do:
1. Combine flour blend, sugar, baking powder, cinnamon, xanthan and salt in a bowl.
2. In a large bowl, mix eggs, butter, (or applesauce), milk, and diced apple. 3. Stir in dry ingredients. 4. Spoon into oil sprayed muffin pan. Bake at 350° for 40-45 min. or until a toothpick inserted in the center comes out clean.
