Herring and Red Pepper Rolls

What you need:

+ 6 oz. herring fillets
+ 1 canned red pepper, quartered
+ flour, for dusting
+ salt and pepper, to taste
+ 3 Tbsp. dry breadcrumbs
+ juice and zest of 1 lime
+ 1 egg, beaten
+ vegetable oil, for frying
What to do:
1. Trim fish and dust in flour.
2. Combine bread crumbs with grated rind and juice of half a lime.
3. Lay a segment of pepper along the skin side of each fish and roll up with the pepper on the inside.
4. Dip rolled fish in beaten egg and coat in the crumb mixture. Shallow fry 3-4 min. each side.
5. Serve with a squeeze of lime, new potatoes and green beans.
