Sweet 'Tater Packet Gratin

What you need:

+ 3 med. North Carolina sweet potatoes
+ 2 oz. grated Gruyére or Jarlsberg cheese (1/2 c.)
+ 1/2 c. thinly sliced Vidalia onion or sweet onion
+ 1 Tbsp. minced garlic
+ 1 Tbsp. olive oil
+ salt and freshly ground pepper
+ heavy duty aluminum foil
+ parchment paper
What to do:
1. For each portion: Tear off aluminum foil into a 12-inch square piece. Line with a similar sized piece of parchment.
2. Peel sweetpotatoes and cut into 1/4-inch slices. Arrange 3-4 slices per packet. Sprinkle each with grated cheese, onion and garlic.
3. Drizzle a little olive oil over top and season with salt and pepper. Fold, seal and grill until done.
