Herb-Crusted Lamb Cutlets

What you need:

+ 4 x 3 french-trimmed Australian lamb cutlet racks
+ 1/4 c. fresh wholewheat breadcrumbs
+ 1 Tbsp. fresh rosemary, finely chopped
+ 1 Tbsp. fresh flat-leaf parsley, finely chopped
+ 2 tsp. fresh thyme, finely chopped
+ 3 cloves garlic, crushed
+ 3 tsp. pesto
What to do:
1. Preheat oven to 400°F. Combine breadcrumbs, herbs, garlic and pesto in a bowl.
2. Press breadcrumb mixture into lamb racks.
3. Place lamb in shallow baking dish and roast uncovered for approx. 20-25 min. or until meat thermometer inserted into center of lamb registers 135°F for medium rare.
4. Let lamb stand 5 min. before cutting racks into cutlets.
