Ginger-Plum Pork Chops

+ 4 boneless pork chops, 1/2-in. thick
+ 1 tsp. vegetable oil + 1 (8 oz.) jar plum preserves + 2 tsp. ground ginger, or 1 Tbsp. grated fresh ginger + 3 Tbsp. cider vinegar What to do:
1. Heat oil in large nonstick skillet over medium-high heat. Brown chops 2 min. on one side, turn; stir together remaining ingredients and add to skillet.
