Guajillo Pork Chops

What you need:

+ 8 bone-in pork loin chops, 1/2-in. thick
+ 2 c. guajillo, or tomato salsa
+ 3 Tbsp. honey
+ 1 Tbsp. oil
What to do:
1. Reserve 1 c. of salsa; mix with honey. Brush the honey salsa mixture over the pork chops.
2. Heat oil in large skillet over medium heat. Sauté pork for about 10 min., turning once until internal temperature on a thermometer reads 145°F, followed by a 3-min. rest time. Transfer pork chops to a plate; cover to keep warm.
3. Add reserved salsa to skillet and stir over medium heat until salsa is warmed; serve with pork.
