IdahoŽ Potatoes with Peppers and Onions

+ 1 large IdahoŽ potato, peeled and diced
+ 1/4 c. chopped onion + 1/4 c. chopped green or red pepper + 4 eggs + 1/4 c. skim milk + 1/4 tsp. salt + 1/8 tsp. pepper + dash of garlic powder What to do:
1. Combine potato, onion and green pepper in a 9-in. microwave-safe pie plate. Cover and microwave at HIGH 4-5 min., or until potato is tender.
2. Combine eggs, milk, salt, pepper and garlic powder in a medium bowl; beat slightly. Pour over potatoes in pie plate. Cover and microwave at HIGH 4 min., stirring after 2 min. Let stand, covered, 1 min. Serve immediately. * Recipe courtesy of Idaho Potato Commission. Nutritional information:
